Tarragon butter


1.To make the tarragon butter: Combine ingredients in small bowl. Place butter on a piece of plastic wrap; shape into a 6cm log, wrap tightly. Freeze until firm.
2.Boil, steam or microwave whole potatoes until tender; drain. Cool slightly; slice potatoes thickly.
3.Meanwhile, wrap bacon around beef; secure with toothpicks.
4.Meanwhile, cut tarragon butter into 2cm-slices; stand until at room temperature.
5.In a large oiled frying pan, cook beef for about 5 minutes each side, or until cooked to your liking. Cover beef; stand for 5 minutes.
6.Meanwhile, add the potatoes to same pan; cook for about 2-3 minutes, or until golden.
7.Place potato on serving plates; top with beef, then butter slices.

Not suitable to freeze. Not suitable to microwave.
