Method

1.Drain olives and reserve 2 tablespoon of the olive oil marinade. Plunge beans into a pan of boiling water for 1 minute, drain, refresh under cold water and drain again.
2.Combine olives, beans, carrot and bocconcini in a large serving bowl. Make dressing by whisking the reserved olive oil marinade with the red wine vinegar and sugar. Add dressing to salad and toss gently.

You could also use oil-marinated mixed olives from a delicatessen. Salad, without the dressing, can be prepared several hours ahead. Keep covered in the refrigerator. Add dressing just before serving.
