Steak with creamy mushroom sauce

This classic Aussie pub-style dish is given a delicious makeover using fresh, good quality ingredients to produce a rich, creamy sauce.

1.In a large frying pan, heat oil over moderately high heat. Cook beef 3-4 minutes each side or until cooked to taste. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes.
2.In same pan, melt butter over moderate heat. Add onion; cook and stir for 2-3 minutes or until soft. Add garlic and mushroom. Cook and stir 3-5 minutes or until mushroom is soft.
3.Add flour; cook and stir 1 minute. Stir in wine: bring to the boil. Stir in stock; bring to the boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until slightly thickened.
4.Add cream, cook and stir for 1 minute or until heated. Season. Serve beef with sauce, thyme and vegies.
