Seafood béchamel

Béchamel sauce


1.Make béchamel: heat butter in a saucepan over medium heat until melted. Stir in the flour. Cook, stirring with a wooden spoon, for 1 minute to form a roux. Don’t allow mixture to brown. Remove from heat.
2.Gradually stir in milk until smooth. Return to heat. Cook, stirring constantly, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.
3.Bring wine to a boil in medium frying pan then reduce heat. Simmer, uncovered, until reduced by half.
4.Add 1 cup of béchamel, cream and marinara mix to pan; bring to a boil then reduce heat. Simmer, uncovered, about 5 minutes or until seafood is cooked through.
5.Stir in dill and juice.
