Method

1.Hard boil eggs; cool slightly then peel and cut in half. Meanwhile, pan-fry prosciutto until crisp; chop coarsely.
2.Divide rocket leaves and eggs among serving plates. Sprinkle with prosciutto and shaved parmesan cheese.
3.Serve drizzled with caesar dressing.
