Prosciutto-wrapped chickens with lemon and sage

Wrapping these little chickens in proscuitto helps keep them moist while roasting, as well as infusing the meat with their flavour.

1.Preheat oven to 220ºC/425ºF.
2.Wash chickens under cold water; clean cavity well. Pat dry inside and out with absorbent paper.
3.Cut lemon into eight wedges. Place a lemon wedge and 2 sage leaves into each chicken cavity.
4.Make fennel rub, combine fennel seeds, garlic and oil in a small bowl; rub mixture all over chickens.
5.Wrap a slice of prosciutto around centre of each chicken; secure with a toothpick. Divide chickens between two baking dishes.
6.Roast chickens about 45 minutes or until browned and cooked through. Transfer to a serving platter; cover with foil, stand 15 minutes.
7.Remove toothpicks before serving with extra lemon wedges, if you like.
