Chilli mango dressing

1.Stir sugar and the water in small saucepan over heat, without boiling, until sugar dissolves; bring to the boil. Reduce heat; simmer, uncovered, without stirring, about 1 minute or until liquid is reduced by half.
2.Cool syrup 5 minutes. Blend syrup with remaining ingredients until combined.


3.Dry-fry peppercorns and salt in small frying pan until fragrant. Pound seasonings in mortar and pestle until coarse.
4.Combine spice mix, cornflour and paprika in medium bowl.
5.Shell and devein prawns, leaving tails intact. Add prawns to spice mixture; mix well.
6.Cook prawns on heated oiled barbecue (or grill or grill pan).
7.Serve prawns on spinach; drizzle with dressing.
