Pork saltimbocca kebabs

These pork skewers saltimbocca-style with proscuitto make a great starter or shared platter for a party.

Method

1.Cut pork into 2.5cm (1-inch) pieces. Combine pork and sage in medium bowl; season.
2.Halve prosciutto lengthways. Wrap half the pork pieces in prosciutto; thread plain pork pieces alternately with prosciutto-wrapped pieces onto eight skewers. Cook skewers on heated oiled barbecue (or grill or grill plate).

We used metal skewers but you can use bamboo skewers; cover the ends of the bamboo skewers in foil to prevent scorching during cooking. Or, if you have the time, soak them in cold water for 30 minutes before use.
