Pork kofta with mint yoghurt

Delicious little pork kofta on skewers served with mint yoghurt from Australian Women's Weekly.

Method

1.Place pork mince in a large bowl, add curry paste, breadcrumbs and shallots and mix with clean hands until ingredients are thoroughly combined. Divide mixture evenly into 16 portions.
2.Mould each portion into a sausage shape. Thread 2 portions onto a bamboo skewer. Repeat process to make 8 skewers.
3.Spray large frypan or barbecue hotplate with cooking spray, add skewers and cook for 5-6 minutes, turning often until browned all over and cooked through.
4.Meanwhile, make sauce by whisking together yoghurt and mint jelly. Serve skewers with mint yoghurt sauce.

Prepare pork mixture and thread onto skewers several hours ahead. Place in a single layer on a foil-lined tray and keep refrigerated. Cook as required.
