Method

1.Add ham to large frying pan coated lightly with cooking oil spray; cook, stirring, until browned. Remove from pan; cover to keep warm. Add sage to same pan; cook until just wilted. Remove from pan.
2.Cook pork in pan until browned and just cooked through. Remove from pan; cover to keep warm. Reserve pan for sauce.
3.Meanwhile, cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.
4.To make wine sauce, add wine and sugar to same frying pan; boil, uncovered, until reduced by one-third.
5.Place pasta in large bowl with spinach, onion, chives and oil; toss gently to combine. Serve pasta mixture topped with pork, ham and sage; drizzle with wine sauce.
