Peppered steak with tomato and rocket salad

Tender, juicy peppered steak with a ripe tomato and rocket salad makes a fabulous, relaxed meal for dinner with friends.

1.Preheat oven to 220°C/425°F.
2.Coat beef in mustard and pepper. Heat large oiled frying pan; brown beef all over.
3.Place beef into heated oiled baking dish; transfer to oven. Roast, uncovered, 20 minutes or until cooked as desired. Cover loosely with foil; stand 10 minutes.
4.Meanwhile, make tomato and rocket salad. Whisk vinegar and oil in large bowl. Add remaining ingredients; toss gently.
5.Slice beef; serve with salad.

If kumatoes aren’t available any tomato will do.
