1.Place vermicelli in a large heatproof bowl and cover with boiling water. Stand until just tender, drain.
2.Meanwhile, heat half the oil in large saucepan and in batches, cook lamb until browned. Remove from pan.
3.Heat remaining oil in same pan. Stir lemongrass, chilli, ginger and garlic over heat until fragrant. Add sauce, stock and sugar; continue stirring until mixture boils.
4.Add asparagus; simmer, uncovered, until asparagus is just tender. Add herbs, onion, tomato, vermicelli and lamb to pan; stir until soup is hot.
