Margarita chicken

Delicious grilled margarita chicken that is fresh and zesty with a kick of tequila.



1.Heat oiled grill plate (or grill pan or barbecue). Preheat grill (broiler).
2.Cut lime rind into thin strips; squeeze juice from lime. Combine rind, chicken, chilli, garlic and oil in a large bowl; season.
3.Cook chicken on grill plate, over medium-high heat, for 5 minutes each side or until cooked through.
4.Meanwhile, place tomatoes under grill until just beginning to split.
5.Combine juice, tequila, extra oil, sugar and coriander in a medium bowl; season to taste.
6.Microwave rice according to packet directions.
7.Serve chicken with rice; top with tomatoes and tequila mixture.

You could cook the tomatoes on the grill plate (or barbecue flat plate), alongside the chicken if you prefer, rather than turning on your grill (broiler).
