Lime chicken on lemon grass skewers

1.Cut 3cm (1 inch) off the end of each lemon grass stalk; reserve stalks. Chop the 3cm pieces finely; combine in large shallow dish with peanut oil, rind and coriander.
2.Cut each chicken fillet into three strips crossways; thread three strips onto each lemon grass stalk ‘skewer’. Place skewers in dish with lemon grass marinade; turn skewers to coat chicken in marinade. Cover; refrigerate 3 hours or overnight.
3.Cook skewers on heated oiled barbecue (or grill or grill pan) until chicken is browned and cooked through.
4.Meanwhile, combine remaining ingredients in screwtop jar; shake well. Serve with chicken skewers.
