Leg of lamb on lemon scented potatoes

Fragrant roast lamb on a bed of scented potatoes makes a fabulous dinner or weekend roast lunch, the juices of the lamb help soften and flavour the potatoes.

Method

1.Preheat oven to 240°C/475°F.
2.Combine pancetta, garlic, rosemary and rind in small bowl.
3.Using sharp knife, pierce lamb all over; press pancetta mixture into cuts.
4.Place potato in large baking dish; drizzle with juice and stock, dot with butter.
5.Place lamb on potato; roast, uncovered, 20 minutes. Reduce oven temperature to 200°C/400°F; roast about 1 hour or until lamb is cooked as desired.
6.Cover lamb; stand 10 minutes before slicing. Serve lamb with potatoes and lemon wedges.
