Method

1.Boil, steam or microwave beans until tender; drain. When cool enough to handle, peel away grey-coloured outer shells and place in a large bowl with beetroot and rocket.
2.Meanwhile, to make anchovy dressing, combine anchovy, capers, oil, rind, mustard and vinegar in a small bowl. Add 2 tbsp of the dressing to bowl with salad and toss gently.
3.Cook lamb on heated oiled grill plate (or grill or barbecue), brushing occasionally with remaining dressing, until cooked as desired. Slice lamb and serve with salad.
