Method

1.Melt half of the butter in medium saucepan; cook onion and apple, stirring, without browning, until softened. Stir in rice to coat in butter mixture.
2.Stir in stock; bring to a boil. Simmer, covered, about 12 minutes, until stock is absorbed. Remove from heat; stand, covered, 5 minutes. Stir in raisins, parsley and almonds.
3.Meanwhile, melt remaining butter in large frying pan; cook fish about 2 minutes each side or until browned and just cooked through.
4.Serve with rice mixture and lemon wedges.

Wild blend rice is a combination of white long grain rice and wild rice. Rice can be prepared several hours ahead; cook fish just before serving.
