Yoghurt sauce

Method

1.Process chickpeas, garlic, onion and olive oil until ingredients begin to combine; transfer mixture to medium bowl. Stir in egg, cumin, soda and flour until combined. Shape mixture into 12 patties.
2.Heat vegetable oil in large frying pan; cook felafel, in batches, until browned. Drain on absorbent paper.
3.To make yoghurt sauce; combine ingredients in small bowl.
4.Serve felafel on pita, topped with yogurt sauce.

You can serve the felafel with a rocket and tomato salad. If you like hummus then you’ll love this Middle-Eastern vegetarian specialty, which is also made from chickpeas.
