Method

1.Preheat oven to 220°C (200°C fan-forced).
2.Place kumara on oven tray; spray with cooking oil. Roast, uncovered, about 20 minutes or until tender.
3.Meanwhile, cook bacon in heated large frying pan; drain on absorbent paper. Chop coarsely.
4.Combine ingredients for honey mustard dressing in small bowl.
5.Place kumara and bacon in large bowl with remaining ingredients and dressing; toss gently to combine.
