Packed with good fats, this single-serve ocean trout dish with chilli avocado mash is a quick and tasty dinner option.

Preheat oven to 200’C (180’C fan forced). Line a small oven tray with baking paper.
Wrap trout fillet with prosciutto and place on prepared tray. Drizzle with half the olive oil. Roast trout for 8 minutes or until prosciutto is crisp and trout is almost cooked.
Meanwhile, using a fork, mash all ingredients in a small bowl; season to taste.
Place tomato, lettuce, herbs and trout on a plate, sprinkle with pistachios and drizzle with remaining olive oil. Serve with chilli Avocado Mash and a lime wedge.
