1.Heat olive oil in a large frying pan wok on high. Stir-fry chicken and pork for 3-4 minutes until cooked. Remove from pan. Add prawns and stir-fry for 2 minutes. Remove from pan.
2.Add onion to pan and stir-fry for 1 minute or until tender. Blend in curry paste and cook, stirring, for 1-2 minutes. Toss through noodles and stir-fry for 2-3 minutes.
3.Toss through greens, mushrooms, sauces, sherry and sesame oil, and stir-fry for 1-2 minutes.
4.Return meat and prawns to pan. Cook, tossing, for 1-2 minutes until heated through. Serve straight away.
Fore quicker version, replace fresh Asian vegetables with a 500g packet of frozen vegetables, used as directed.Note
