1.Shell and devein prawns, leaving tails intact. Process garlic, onion, ginger, curry powder, spices and half of the oil until smooth.
2.Heat remaining oil in large saucepan, cook garlic mixture, stirring, until fragrant. Add carrot, cook, stirring, 2 minutes, remove from pan.
3.Add prawns and onion to same pan, cook, stirring, until prawns are tender. Return carrot mixture to pan with coconut milk, stir over heat until hot.
