1.Cook eggplant in large baking-paper-lined steamer, over a large saucepan of simmering water, about 15 minutes or until tender.
2.Meanwhile, rinse rice under cold water until water runs clear, then drain. In a medium saucepan, bring water to the boil, and add rice. Cook with lid on over low heat for 10 minutes. Remove from heat and stand covered for 10 minutes. Fluff rice with fork.
3.Boil, steam or microwave snow peas until tender, then drain.
4.Combine mirin, sauce, sugar and ginger in a large frying pan. Bring to the boil. Add half the eggplant and cook over medium heat for about 2 minutes or until eggplant caramelises. Transfer eggplant to heatproof bowl. Cover to keep warm. Repeat with remaining eggplant.
5.Divide rice among serving plates and top with snow peas and eggplant. Sprinkle with sesame seeds.
