Butterflied prawns with garlic butter

Bright, light and zesty, this classic dish makes a perfect starter or simple lunch. The garlic compliments all kinds of shellfish beautifully.

Method

1.Butterfly prawns by slicing prawns in half lengthways through back, without cutting all the way through the prawn.
2.Heat oil in large frying pan over medium-high heat. Cook prawns about 1 minute each side or until browned lightly. Add butter and garlic; cook, stirring, about 2 minutes or until fragrant. Stir in juice; season to taste.
3.Halve lettuce. Quarter avocado. Using zester, peel rind in thin strips from lemon (or peel lemon then cut peel into thin strips).
4.Serve prawns with lettuce and avocado; drizzle with garlic butter, sprinkle with rind. Accompany with lemon cheeks, if you like.

Some fishmongers and fish markets sell prawns already butterflied; you can use these instead of preparing your own.
