Blue cheese stuffed beef with brandied figs

Autumn figs and blue cheese combine beautifully with hot steak, asparagus and brandy gravy.

Method

1.Preheat oven to 200°C/400°F.
2.Using a sharp knife, cut along the length of one side of each steak, three-quarters of the way through, to form a pocket. Fill pockets with blue cheese; secure with a toothpick.
3.Heat 1 tablespoon of the oil in a large frying pan; cook beef 3 minutes each side or until browned. Transfer beef to an oiled oven tray; cook, in oven, for 15 minutes or until cooked as desired.
4.Meanwhile, sprinkle cut sides of figs with sugar.
5.Heat remaining oil in same frying pan; cook figs, cut-side down, with asparagus until figs begin to caramelise. Add brandy; cook until mixture reduces and thickens slightly, and becomes slightly syrupy.
6.Remove toothpicks from beef; serve beef with figs and asparagus. Drizzle with brandy syrup. Serve with fried potatoes, if liked.
