Curry paste


1.To make the curry paste; combine chilli, galangal and peel in bowl, cover with water; cover, stand several hours. Drain peel mixture, reserve 1/2 cup liquid. Blend or process peel mixture, reserved liquid, onion, garlic, rind, lemon grass and ginger until smooth.
2.Heat oil in large wok, stir-fry steak in batches until browned all over. Return steak to pan. Add 1/4 cup curry paste, stir for 2 minutes.
3.Add bamboo shoots, chilli, sauce, lime leaf and sugar; stir-fry until steak is tender. Stir in basil.
