Method

1.Cook beef in heated oiled large frying pan until browned both sides and cooked as desired; remove from pan. Cover; stand 5 minutes before slicing thickly.
2.Meanwhile, cook paste in same pan, stirring, until fragrant. Add coconut milk; simmer, uncovered, 5 minutes or until sauce thickens. Add zucchini; simmer, uncovered, until tender.
3.Return sliced beef to pan; stir to combine.

Steamed beans, peas or broccoli would be a great addition to this delicious red curry.
