1.Toss beef in flour; shake away excess flour. Heat half of the oil in 2.5 litre (10-cup) flameproof casserole dish; cook onion and bacon, stirring, until onion is soft. Remove from dish.
2.Heat remaining oil in dish; cook beef, in batches, until browned.
3.Return onion mixture to dish; stir in stock. Cook, covered, in moderate oven for 1 hour.
4.Add kumara, potatoes and thyme. Cook, covered, for 1 hour or until beef is tender.
5.Stir in paste; serve sprinkled with parsley.
Recipe can be made a day ahead and refrigerated, covered.
