Basic tomato pasta sauce

1.Heat oil in a medium saucepan; add onion and chilli and sauté lightly or until onions have just softened. Season with salt and pepper. Add tomato and boil for 30 minutes with lid on.
2.Remove lid and simmer until desired consistency; stir in basil.

Variations for basic sauce recipe

3.To make a puttanesca style sauce, add capers, black olives, anchovies, oregano and garlic to tomato sauce and simmer for 10 minutes
4.To make an amatriciana style sauce, fry off 2 rashers bacon with the onion mixture and add 1 teaspoon dried chilli flakes.
5.To make a bolognese style sauce brown 200g of minced beef add to the sauce and simmer 10 minutes.
6.To make a napolitana style sauce add 1/2 cup basil leaves that you tear up to the sauce and simmer 10 minutes.
