Barbecued salmon in brown sugar

Method

1.Combine consommé and sugar in a small saucepan; cook, stirring, until sugar dissolves. Divide mixture in half, cool. Add one portion of the cooled mixture to salmon in a shallow dish; turn salmon to coat.
2.Cook salmon on a heated oiled grill plate (or grill pan or barbecue), over medium-high heat, for 2 minutes each side or until cooked as desired. Cover; stand 5 minutes.
3.Meanwhile, place noodles in a large heatproof bowl, cover with boiling water; separate with fork, drain.
4.Serve salmon with noodles and watercress; drizzle with remaining heated consommé.

Salmon can be marinated for 2 hours before cooking. Chicken stock can be used instead of the consommé.
