Asian-flavoured trout with shiitake mushrooms

This is a great way to cook whole trout. The mushrooms add a wonderful umami element to the dish.

1.Crush beans in small bowl. Add garlic, ginger, chilli, half of the soy sauce and half of the onion; stir to combine
2.Place each fish on oiled piece of foil large enough to completely enclose it; place a quarter of the bean mixture inside each fish, wrap tightly in foil. Cook fish on heated oiled grill plate, uncovered, about 10 minutes or until cooked as desired
3.Meanwhile, cook mushrooms on heated oiled flat plate, uncovered, until tender; drizzle with remaining soy sauce
4.Serve mushrooms with fish, drizzled with juice and sprinkled with remaining onion
