The mint and ginger syrup take this delicious tropical fruit salad to new heights. Use brown sugar if palm sugar is hard to find. You'll need about three passion fruit for this recipe.
1.In a small saucepan, stir the water and sugar over heat, without boiling, until sugar dissolves; bring to a boil. Boil, uncovered, without stirring, 5 minutes. Add ginger; simmer, uncovered, 5 minutes or until syrup thickens slightly. Cool to room temperature. Stir in juice and mint.
2.In a large bowl, place prepared fruit with syrup; toss gently to combine. Refrigerate until cold.
