1.Combine the water, cordial and sugar in small saucepan. Scrape vanilla seeds into pan then add pod, stir over medium heat until sugar dissolves; bring to the boil.
2.Reduce heat; simmer, uncovered, about 10 minutes or until syrup thickens slightly. Transfer syrup to medium heatproof jug. Cover; refrigerate 1 hour.
3.Combine fruit in large bowl. Pour syrup mixture over fruit.
