Pink guavas in spicy syrup

These zesty poached guavas are so delicious served with a big scoop of vanilla ice-cream.

We love eating them simmered in a sweet and spiced syrup.




1.Using vegetable peeler, peel rind thinly from lime; cut rind into thin strips. Squeeze 1 tablespoon juice from lime.
2.Combine rind, juice, sugar, cinnamon, cloves and the water in medium saucepan; stir over heat, without boiling, until sugar dissolves. Simmer, covered, 20 minutes.
3.Peel guavas; cut into quarters, discard seeds.
4.Add guavas to syrup; simmer, covered loosely, about 10 minutes, or until guavas are tender. Cool guavas in syrup.
5.Remove guavas from syrup; place in medium heatproof bowl. Strain syrup through fine sieve; discard cinnamon and cloves.
6.Return syrup to same pan; simmer, uncovered, about 10 minutes or until reduced to about 1¼ cups. Remove pan from heat; stir in extract. Pour syrup over guavas; cool. Cover; refrigerate.
7.Serve guavas and syrup, if you like, with yoghurt, whipped cream or ice-cream.
