Ingredients

Method

1.Melt butter in small saucepan or in microwave oven; stand 2 minutes. Skim off and reserve clarified butter from the top, leaving milky solids; discard solids.
2.Melt chocolate in medium heatproof bowl; stir in clarified butter.
3.Beat egg whites in small bowl with electric mixer until soft peaks form. Gently fold egg white, cream and colouring into white chocolate mixture; stir in liqueur.
4.Divide mousse among serving glasses; refrigerate about 3 hours or overnight.
5.Decorate mousse with sliced strawberries and fresh mint leaves, if you like.

This mixture will make 2 cups of mousse. Divide mousse among small glasses for serving ­40ml shot glasses will give you about 12 delicious mini servings.
