1.Chop half of the chocolate finely. Chop remaining chocolate coarsely, melt in small heatproof bowl over small saucepan of simmering water.
2.Process figs, cherries, rind and half of the brandy until fruit is chopped finely. Transfer mixture to large bowl, stir in nuts, clementines, ginger, spices, chopped and melted chocolate.
3.Spoon mixture along long side of each rice paper sheet. Roll each sheet to enclose filling and make a log shape. Pinch along top of each log to make a triangle shape, brush rice paper with remaining brandy.
4.Wrap fruit and nut logs in baking paper, stand overnight at room temperature. Serve logs sliced thickly.

Candied clementines are available from specialty food stores and delicatessens.
