1.Combine milk in medium saucepan with sugar and rind, bring to a boil, stirring occasionally. Gradually stir in rice, reduce heat, simmer, covered, about 40 minutes or until rice is tender, stirring occasionally. Discard rind.
2.Meanwhile, make dried fruit compote. Place ingredients in medium saucepan, bring to a boil. Reduce heat, simmer, uncovered, 15 minutes. Remove from heat.
3.Blend cornflour with the water in small bowl, stir in egg yolks. Stir in a heaped tablespoon of the hot creamed rice then pour egg mixture into creamed rice.
4.Stir over medium heat until mixture boils and thickens. Stir in extract, remove from heat. Stand 15 minutes before serving with compote.
