1.To make garlic and gherkin mayonnaise, blend or process egg yolks, mustard, juice, garlic and sugar. With motor operating, add oil in a thin steady stream until mayonnaise is thick. Stir in gherkins and parsley; season to taste.
2.Serve prawns with mayonnaise for dipping.
