1.Process sugar, butter and sifted flour until crumbly. Add egg yolk and milk, process until combined. Knead dough on floured surface until smooth. Cover, refrigerate 30 minutes.
2.Meanwhile, process fruit mince until chopped finely.
3.Roll dough between two sheets of baking paper to 25cm x 30cm. Spread fruit mince evenly over rectangle, leaving 1cm border. Using paper as a guide, roll rectangle tightly from short side to enclose filling. Wrap roll in baking paper, refrigerate 30 minutes.
4.Preheat oven to 160°C (140°C fan-forced). Grease two oven trays, line with baking paper.
5.Trim edges of roll, cut roll into 1cm slices. Place slices, cut-side up, onto oven trays.
6.Bake spirals about 20 minutes. Cool on tray, brush tops with jam.
