Method

1.Place spinach in a colander and squeeze out excess moisture. Combine spinach, shallots and cheese in a bowl then stir in lightly beaten eggs.
2.Stack together 6 sheets of filo pastry, brushing with a little melted butter between each layer. Repeat with remaining filo sheets and butter to make 2 more stacks with 6 sheets of filo in each.
3.Cut stacks in half lengthways, making 6 filo strips altogether. Divide spinach mixture into 6 equal portions. Spoon one portion of spinach mixture on a bottom corner of each filo strip.
4.Fold corners diagonally over filling then continue folding to end of strips to form neat triangles. Brush triangles with melted butter and place on lightly greased oven trays.
5.Bake in a 180C/355°F preheated oven for 25-30 minutes until golden.
