1.Preheat oven to 220°C.
2.Heat oil in small saucepan; cook onion and garlic, stirring, until onion softens. Add flour; cook, stirring, until mixture bubbles and thickens. Gradually stir in combined wine, stock and cream; cook, stirring, until sauce boils and thickens. Season to taste; stir in parsley.
3.Meanwhile, push the snails into shells. Arrange snails on oven tray; bake about 5 minutes or until heated through.
4.Serve snails with sauce.
