1.Preheat oven to 220°C/425°F.
2.Boil, steam or microwave potatoes until almost tender; drain. When cool enough to handle, slice thinly.
3.Meanwhile, melt 50g of the butter in large saucepan; cook onion and celery, stirring, until onion softens. Add flour; cook, stirring, about 2 minutes or until mixture bubbles and thickens.
4.Gradually stir in stock; cook, stirring, until mixture boils and thickens. Remove from heat; stir in fish, peas, cream and parsley. Season to taste.
5.Spoon mixture into shallow 1.5-litre (6-cup) ovenproof dish; top with potato. Brush with remaining melted butter. Bake, uncovered, about 25 minutes or until browned lightly.

We used desiree potatoes in this recipe. Season this dish carefully as the haddock and stock are already salty.
