roasted tomato, goat cheese and chicken pizza



1.Preheat oven to 230&degC.
2.Place tomatoes on oven tray lined with baking paper; drizzle with combined vinegar and sugar. Bake, uncovered, about 25 minutes or until tomatoes are soft.
3.Meanwhile, cook chicken on heated oiled grill plate (or grill or barbecue) until browned both sides and cooked through. Cool 5 minutes; cut into thin slices.
4.Place pizza base on oven tray; bake, uncovered, about 10 minutes or until browned lightly.
5.Top pizza with tomato, chicken, coriander and crumbled cheese. Bake, uncovered, 5 minutes or until pizza is browned and crisp.
6.Just before serving, top with rocket.

Lebanese bread can be substituted for prepared pizza base.
