1.Preheat oven to 180°C (160°C fan-forced).
2.Cook beef in heated, oiled medium frying pan until browned all over; place in small baking dish. Roast, uncovered, in oven about 20 minutes or until cooked. Wrap beef in foil.
3.Heat oil in same pan; cook onion until soft. Add sugar and vinegar; cook, stirring, until caramelised.
4.Preheat grill. Cut bread into 1.5cm slices; cut each slice into quarters. Brush bread, both sides, with extra oil; toast both sides under grill.
5.Slice beef thinly. Spread mustard on bread; top with beef and onion, sprinkle with parsley.
