Prosciutto, chives and sour cream potatoes

1.Preheat oven to 200°C/400°F. Place potatoes on an oven tray; drizzle with 2 teaspoons olive oil. Roast 1 hour or until tender; season.
2.Meanwhile, heat 2 teaspoons olive oil in a small frying pan over medium heat; cook prosciutto, stirring, for 2 minutes or until crisp; drain. Reduce heat; cook 1 finely chopped small onion, stirring occasionally, for 8 minutes or until caramelised.
3.Cut a cross in potatoes; squeeze upwards from the bottom. Top with sour cream, onions, prosciutto and chives.
