1.Preheat oven to 180°C (160°C fan-forced). Place unpeeled potatoes on oven tray. Bake, about 1 hour or until tender; cool.
2.Cut each potato into six wedges; scoop out flesh, leaving skins intact. Reserve potato flesh for another use.
3.Place potato skins in single layer on wire rack over oven tray. Brush with oil; sprinkle with combined rosemary, salt and pepper. Bake, uncovered in 200°C (180°C fan-forced) oven for about 20 minutes or until crisp.

Potato skins can be served hot or at room temperature; use scooped out flesh in potato salad or bubble and squeak.
