Method

1.Preheat oven to 200°C (180°C fan forced).
2.Process nuts until finely chopped, transfer to wide shallow bowl.
3.Beat egg white in another wide shallow bowl with fork. Dip chicken in egg white then nuts to coat. Place chicken on oiled wire rack over oven tray, season. Bake chicken about 25 minutes or until cooked through.
4.Serve chicken with aïoli.

Aïoli is a garlic mayonnaise; it is available in supermarkets and delicatessens.
