Ginger cream


1.Grease 12 hole (⅓ cup/80ml capacity) muffin pan.
2.Sift flour and ground ginger into large bowl, rub in butter. Stir in sugar, coconut, glace ginger and pineapple, then milk, eggs and golden syrup.
3.Meanwhile make ginger cream. Beat cream and sugar together in small bowl until thick, stir in ginger.
4.Spoon mixture into prepared pan. Bake in moderately hot oven about 20 minutes.
5.Serve with ginger cream.
