Fruit filling


1.Preheat oven to 180°C (160°C fan forced). Grease 20cm x 30cm (8-inch x 12-inch) rectangular pan, line base and long sides with baking paper, extending paper 5cm (2 inches) over sides.
2.Process sifted flour and icing sugar, butter and spice until ingredients combine. Press half the dough into pan. Cover and refrigerate remaining dough. Bake 15 minutes, cool.
3.Meanwhile, to make fruit filling. Blend or process fruit until chopped finely.
4.Using wet hand, press filling over base. Roll remaining dough between sheets of baking paper until large enough to cover filling, trim to fit. Brush dough with a little water, sprinkle with caster sugar
5.Bake slice about 35 minutes. Cool slice in pan before cutting.

Use a palette knife to press dough evenly over base of pan.
