Green icing

Method

1.Beat butter, sugar and egg in small bowl with electric mixer until combined. Stir in golden syrup and sifted dry ingredients, in two batches.
2.Knead dough on floured surface until smooth; roll dough between sheets of baking paper until 5mm thick. Refrigerate 30 minutes.
3.Preheat oven to 150°C/130°C fan-forced. Grease oven trays; line with baking paper.
4.Using 6cm number cutters, cut 45 numbers from dough; place about 3cm apart on oven trays. Bake about 15 minutes. Cool on trays.
5.To make green icing, place egg white in small bowl, stir in half the sifted icing sugar, then remaining sifted icing sugar, flour and enough juice to make a thick, spreadable icing. Tint icing green.
6.Spread cookie numbers with icing; set at room temperature.
